Cheesy Hash Brown Skillet

This is a Sponsored post written by me on behalf of Simply Potatoes for SocialSpark. All opinions are 100% mine.

Now that we are into Fall Mr. B and I are into more comfort food type meals.  We are also a little bit busier in our day jobs and still trying to maintain our goal of some weight loss before the holidays hit.
Simply Potatoes - Cheesy Hash Brown Skillet
We are also fond of meat and potatoes but with just the 2 of us, I don't like to buy a big bag and have them go bad.  Enter Simply Potatoes
Simply Potatoes
I have found that the Simply Potatoes fresh potato line suits us best! They are made with the freshest ingredients and are never frozen. They save me the time of peeling and or shredding and one package goes a long way with our eating habits!

Now, a meal is easy to put together whether it is breakfast. lunch on the weekend or, of course, a satisfying dinner!  Plus, I get to sneak in some extra nutrition! Score one for Kath!

The parent company of Simply Potatoes, Crystal Farms Company, is also known for other great-tasting, high quality foods such as cheese, butter and English muffins. Almost all of their products, including the Simply Potatoes, can be found in the dairy section of your favorite store.

One of the easiest meals I've made recently was a Cheesy Hash Brown Skillet. It can be prepared and on the table in about 30 minutes!  Perfect for those busy weeknights when I don't want to spend all night at the stove after a "fun" day at work. Plus, it's all made in one pan so, no sink full of dishes to clean up after! Score one more for Kath! And!  You should have everything already on hand. That makes the score 3 for Kath!

Cheesy Hash Brown Skillet

Ingredients
1 lb lean ground beef (ground turkey could be used instead)
1/2 Cup chopped onion
1 Package Simply Potatoes Shredded Hash Browns
1 Tablespoon vegetable oil
2 Cans (14.5 oz) Italian Seasoned Diced Tomatoes, undrained
1 teaspoon salt
1 Cup shredded Shredded Sharp Cheddar Cheese

1. In 12-inch nonstick skillet cook ground beef and onion until browned. Stir in Simply Potatoes. Spread into an even layer; press down lightly with spatula. Cook 6 to 7 minutes or until golden brown on the bottom. 2. Drizzle with 1 tablespoon vegetable oil. Turn Simply Potatoes mixture over with spatula in sections. Continue cooking 6 to 8 minutes or until potatoes are golden brown and tender, turning again if necessary. Add tomatoes and salt. Cook until tomatoes are heated through. Sprinkle with cheese; cook until cheese is melted.

30 Minute Cheesy Hash Brown Skillet
See? Just as promised, easy and oh so tasty!. Not to mention, this meal serves 6 and each serving is only about 280 calories!  Nutritious for dinner plus, leftovers for our lunches the day!
Be sure to check out Simply Potatoes on Pinterest and at Simply Potatoes Favorites for more tasty recipes using all of the other products in their line of yummy goodness!

Fall Porch Decorations

Fall Porch Decorations - Kathe With An E
Last year, when we made the decision to move, one of my must haves in a new home was a big front porch.  Well friends, I got it!
Fall Porch Decorations - Kathe With An E
Not only is it long, it is deep too! And, I love it!  Now that we have been here a full year, it was time for me to take my decorating outside and set up some Fall porch decorations.
Fall Porch Decorations - Kathe With An E
Nothing too over the top.  The metal gate piece behind the scarecrow is from under the back deck.  The previous owners had a dog that they kept contained under there.  You all know, no one contains our Max, so he was okay with me using it in my porch vignette.
Fall Porch Decorations - Kathe With An E
Everything else came from Michael's.  I bought them over the course of several weeks to take advantage of sales and coupons.  That plan really helped to keep the decor on the cheap.

The mums here are fake but...

The ones in the railing boxes are real.

Lowes had them at buy 1 get 1 free, making them so affordable! I left them in their pots so that in a few weeks I can plant a few in the ground to come back next year. I used some summer annuals that had survived the heat we've had the past few weeks as filler and thriller.

The beautiful colors of Fall!

Having this front porch to decorate is like having a whole other room! In just a few weeks, it will be transformed again, for Halloween!  And!  I already have BIG plans for Christmas!!

Pallet Wood Centerpiece

Pallet Wood Centerpiece - Kathe With An E
A few weeks ago I asked Mr. B if he could make me a wooden centerpiece. Late yesterday, he did!  And, he made it all from pallet wood we had hanging around in the garage.
Pallet Wood Centerpiece - Kathe With An E
After he took the pallet apart, he asked how big I wanted it to be.  Big enough to hold 6 mason jars please! A few cuts, some measuring, some glue & clamps and other tools I want to learn to use but can't remember the names of...
Pallet Wood Centerpiece - Kathe With An E
I now have the perfectly rustic centerpiece even better than I had imagined!
Pallet Wood Centerpiece - Kathe With An E
I love how he elevated the bottom so that it looks like it is floating!

Pallet Wood Centerpiece - Kathe With An E
I picked up some silk sunflowers from Michael's so that my centerpiece really says Fall.

I think it will look beautiful in every season though!  I can fill it with pine cones in Winter. Ornaments for Christmas. Daisies in Summer. Even little pumpkins for a different Fall look!
Pallet Wood Centerpiece - Kathe With An E
I love my one of a kind, Mr. B original, pallet wood centerpiece!

Fall China Cabinet Decor

Mother Nature is totally off of her meds here in Colorado this week!  The forecasters are calling for a high of 92 degrees today!  What?? Oh yes! So hard to believe that Fall officially begins in just a few days isn't it?
What isn't hard is, decorating the china cabinet for the Fall season!  I hadn't decorated the china cabinet in the dining room since Spring!  It was seriously time for a change!
Fall China Cabinet Decor - Kathe With An E
Starting up top, I kept with my Keep It Simple mantra and just added my favorite wine box and a leaf platter I got at JCP years ago on clearance.
Fall China Cabinet Decor - Kathe With An E
On the upper shelf I layered 3 of the wooden autumn chargers every tablescaper bought at Walmart a few years ago lol. In front I added Fall dinner plates, also from Walmart.  I've had the big wooden acorns from Hobby Lobby, again, for years...sensing a theme?
Fall China Cabinet Decor - Kathe With An E
This ceramic squirrel is one of my favorite decor items. He was rescued from Goodwill.
Fall China Cabinet Decor - Kathe With An E
On the lower shelf I have a thrift store cornucopia filled with Fall colors and a white lidded pumpkin, also a thrift find.
Fall China Cabinet Decor - Kathe With An E
A leafy platter from Hobby Lobby and 2 of the 3 pumpkins of the set I bought at Kirkland's a few weeks ago. The 3rd one is part of my mantel decor.

On the main section of the cabinet I kept it to a minimum.  A frame filled with leaves from the Dollar Tree, a picture from Hobby Lobby, my favorite rooster and an embellished white pumpkin.
All together, it makes for a pretty and simple fall display in the dining room!
As they say to the south of us, Happy Fall Y'all!!
