Easy Beef Lo Mein

Easy Beef Lo Mein!  A simple one pot wonder you can make at home!
I love quick & easy recipes that use simple ingredients that I can throw together fast and yet tastes like something we would order when out. This easy beef lo mein fits all of that! Added bonus?  It uses ingredients I usually always have on hand! About the only thing you might need to purchase is the sesame oil but, that can easily be found in the Asian food aisle at your local store.  You don't use a lot of it so be sure to store in the fridge so it doesn't go bad.  I've had my bottle for years!

This recipe is so versatile you could substitute the ground beef with chicken, pork or shrimp. You can even make it without the meat for a total vegetarian/ meatless Monday option!  I like to serve it with some potstickers or egg rolls but really, it's just plain good on it's own! And the leftovers?  Oh so good the next day!

Easy Beef Lo Mein.  A simple take out favorite recipe you can make at home!

Ingredients (Serves 6-8):

  • 1 pound of ground beef, cooked and drained
  • 8 ounces spaghetti noodles, cooked
  • 2 carrots, peeled and cut into matchsticks
  • 1 medium onion, thinly sliced
  • ½ head of cabbage, sliced thin
  • 2 tbsp vegetable oil
  • 6 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame oil
Instructions:

Brown the ground beef and drain off fat.
Boil spaghetti noodles until just al dente, drain.
While noodles are cooking, saute vegetables in the oil until tender. Add the noodles, along with the ground beef.
In a small bowl, whisk together soy sauce, sugar and sesame oil and pour over the noodle mixture. Use tongs to mix well to thoroughly coat the noodles and continue to cook until heated through and noodles are done, 5-10 minutes.
Serve with egg rolls or potstickers (and don't forget a fortune cookie!).
