Easy Individual Pot Pies With Progresso Hearty Vegetable Stew With Beef



I don't know about you but I was so ready for Fall to get here!  After the hottest September on record and the 5th driest ever, I am loving the cooler temps, the breeze, the leaves changing color, all of what this season brings really! I also love that I can start the oven more frequently now that the outside temps are more moderate! Fall brings to mind sweaters and comfort food! 
These individual biscuit pot pies with savory stew from Progresso are quick to throw together for a weeknight meal.
One of our favorite and quick Fall meals would be a hearty pot pie. Now I can make dinner even quicker by going semi-homemade using a recent find, Progresso Hearty Vegetable Stew With Beef. Perfectly sized for 2 pot pies this stew is full of tender vegetables, an awesome broth and chunks of beef. Serious comfort food in itself! But heck, get a little fancy! These individual biscuit pot pies with savory stew are quick enough to throw together for a weeknight meal.
By using a homemade biscuit recipe and adding the premade stew, I can have dinner on the table in no time and have it look like I spent hours in the kitchen putting it together! 
I chose to use a biscuit recipe for my pot pies rather than a pie dough because, biscuits come together so much faster than pie dough, and, I believe it makes a better bottom crust for pot pies. Plus, well, biscuits!! 'nuff said!

This biscuit recipe could not be easier!  All of the ingredients can be found in your pantry and fridge and it comes together quickly. Oh and, they are scrumptious too!  You'll have enough dough left to make up some biscuits for future meals like biscuits and gravy, or, just slather them with butter and honey! 

Easy Homemade Biscuit Dough For Pot Pies (Regular Biscuit Instructions Included)

Ingredients
  • 2 cups Flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/3 cup shortening
  • 1 cup milk
Instructions
Preheat oven to 425 degrees and grease your individual serving bowls (if not using for pot pies, grease a cookie sheet).
In a large bowl, combine the dry ingredients and mix well. 
Cut in shortening with a fork or pastry blender until the mix resembles coarse crumbs. 
Gradually stir in milk until the dough begins to form a ball. 
On a well floured surface, dump out the dough. It will be sticky. 
With floured hands, sprinkle the top of the dough with flour and turn the dough ball over once or twice to lightly coat it with flour, just enough so that is is not as sticky. 
The top should be dusted but the dough inside should still be sticky. 
Use care to not overwork the dough. The less you knead and press it, the fluffier the biscuits will be. 
Using just your flour covered hands, gently press the dough out until it is about a half inch thick (if not using for pot pies, press out dough to 1 inch thick). 
For the pot pies, use a 3" round cutter (or whatever size that will completely cover the top of your individual serving bowls with some overlap) and cut out 8 circles. 
Set 4 of the circles aside. 
Take 4 of the circles and press into the bottom of your serving bowls, making sure to come up the sides of the bowls too. 
Add your pot pie mixture and the top each with the reserved biscuit circles.
Crimp the dough over the edge to seal. 
Brush with a little melted butter and make 3-4 small slits on the top. 
Place on a baking sheet (I cover mine with foil for easy clean up if any of the pot pies leak) and bake for 15-18 minutes or until the tops are golden brown (if the tops start to get too brown before the time is up, lightly cover each with foil until done) (for biscuits, place on the greased cookie sheet and bake for 10-15 minutes).
